20+ meal ideas that make you want to go VEGAN

As I promised in my latest article about vegan don’ts, now I share awesome vegan recipes with you. Because you shouldn’t think that you will starve as a vegan or you won’t eat a proper and delicious meal. You can have that! Or better! 😉

WHAT DO VEGANS EAT? WHY WOULD YOU WANT TO GO VEGAN?

I assume you know now what a vegan can’t eat. A lot of things. But don’t be sad, there are still so many types of food you can have. Let me share them with you!

Lots of fruit

Who would have thought that? Ok, I know it is obvious, but still. What kind of fruits have you been eating for now? Apples, bananas, strawberries? Or maybe some melon, peach, orange? But have you heard of pitaya (dragon fruit) or have you ever tried mango/lichi/jackfruit/papaya?Here is a list of exotic fruits you probably never heard of.

What are your favorite fruits? Mine are blueberries, strawberries, mulberries, red grapes, peach, and watermelon. I just love berries! And they are the healthiest! 🙂

Why are fruits good for you?
  • They contain a lot of VITAMINS,
  • also MINERALS,
  • and FIBER,
  • some of them are high in WATER (like watermelon :D),
  • easy to eat (you can eat most of them raw),
  • they cheer you up (studies showed that the more fruit you eat, the happier you are),
  • a lot of them are high in ANTIOXIDANTS, which make your life longer,
  • and last but not least they are DELICIOUS!
How I like to eat fruits?

They best way to eat fruits is raw, at least this is my opinion. But there are some AMAZING recipes that you must try!

1. Porridge with fruits

I love adding fruits to my breakfast porridge, this is probably the easiest way!

Quick recipe:
  • 1 cup of oats (I like fine oats)
  • 2 cup of almond milk (or coconut, whatever you like :))
  • some cinnamon or cocoa powder (maybe both)
  • sweetener (optional)
  • for topping: blueberries, almonds, banana, amaranth flakes

You can make it in the microwave or in a pot, just mix the oats and spices with the almond milk, cook for about 10 minutes (if you make it in the microwave 2-3 minutes is enough!), make sure you don’t burn it, but it should be hot! Add the toppings and enjoy! 🙂

3. Berry Cauliflower & Greens Smoothie Bowl Without Banana

4. Jackfruit Carne Asada

What is Jackfruit? It is a really a fruit, low in calories and can function as a meat substitute. Check out this page for more info!

I like to experiment with this strange fruit and I would definitely try this recipe, and you should too. 😉

Loads of vegetables

The other main category is vegetables. They are really important if you want to be healthy. Unfortunately, a lot of people don’t like them or don’t eat enough…

But you should! Here is the daily dozen checklist (the idea is by Dr. Greger, PDF made by veganuary.com), and you can see how much is the recommended minimum amount of vegetables (and other whole foods).

There are four type of vegetables on that list. These are the following:

  • beans (like chickpea, kidney/black beans, peas, lentils, tofu, hummus, etc.)
  • cruciferous (no, it is not a curse from Harry Potter :D) vegetables (like broccoli, cauliflower, kale)
  • greens (like spring greens, young salad greens, rocket)
  • other vegetables (carrots, sweetcorn, courgettes, garlic, onions, pumpkins or sweet potatoes)
5. Vegan Sloppy Joes

No, vegans don’t eat salad all the time. You can eat delicious and nutritious meals like this one with lentils. Check out the recipe here or click on the picture!

6. Whole Masoor Dal | Brown Lentils

7. Vegan Cacciatore With White Beans

There are so many opportunities to make proper vegan food. You don’t have to worry until you have recipes like this.

8. Lentil Roasted Vegetable Buddha Bowl

Have you heard of Buddha Bowls before? Me neither. But they are really good, full of nutritious foods that fill you up. 😉 Try this one!

9. Teriyaki Tempeh

What about Tempeh? It is one of my favorite food, it is usually crispy and savory! And Tempeh makes a delicious protein addition to any meal. You need the try this recipe! 🙂

10. Whole Roasted Cauliflower

I’ve always wanted to make this, it sounds so good! Karissa says “even meat eaters loved this recipe“! I believe her. 🙂 Look 😉

Flaxseeds, nuts & other seeds

Flaxseeds (or linseeds) are super healthy, because they are high in fiber, high in natural Omega-3, contain a lot of nutrients, they are a rich source of lignans, which may reduce cancer risk, they may lower blood pressure, they contain high-quality protein, they may help control blood sugar.

You should eat 1 tablespoon of flaxseeds every day. You can add it to your oatmeal, smoothie or your salad. Sprinkle some on your hummus toast and so on, get creative! But remember, the best way to eat linseed is in ground form because you can’t digest it otherwise.

Nuts are delicious, easy to eat and loaded with so many good things like nutrients, antioxidants, and fiber! Read more about the benefits of nuts here.

Here are some of the most commonly consumed nuts:

  • Almonds
  • Brazil nuts
  • Cashews
  • Hazelnuts
  • Macadamia nuts
  • Pecans
  • Pine nuts
  • Pistachios
  • Walnuts

Other seeds can be:

  • sunflower seeds,
  • pumpkin seeds,
  • chia seeds,
  • sesame seeds,
  • poppy seeds,
  • etc.

I like to add them to the top of my toast, to my porridge, or make biscuits from them. 🙂

11. Vegan pesto from arugula

You can eat nuts & seeds raw or you can make for example vegan pesto from them.

Or classic peanut butter with jam, or other nut butter. There are plenty of opportunities! 🙂

12. Vegan Sweet Potato and Peanuts Enchiladas

I think it is an awesome idea and looks easy to make. But I bet it is delicious too! Take a look at the recipe. 😉

Whole grains

This is also a large group of food that vegans can eat. They are brown rice, wild rice, quinoa, oats, whole-wheat pasta, etc.

I think I like pasta the most. 🙂 Or whole-wheat pizza, mmm…

13. Vegan lasagna

Raise your hands if you like Piña Colada… I mean lasagna. 😀 This recipe sounds amazing, check it out now!

Vegans eat chocolate and dessert too

Don’t think for a second that vegans don’t eat sweets! Because we do. Of course without milk, but still, they can be really delicious. 🙂
