Easy Chickpea Curry on a Budget (Vegan+GF)

It is been a while when I last shared a recipe with you because I was so busy writing vegan guides for you. But now I am bringing this super delicious, healthy, cheap, quick and easy chickpea curry recipe to you, especially for Angela from Straycurls.com, who helped me a lot building my blog with her awesome tips and secrets. She is such a sweet and helpful person and a big talent in arts.

So, Angela, this one is for you because I know you like curry and rice. 😉 But I think all of you will like it because it is nutritious, healthy and you probably have everything in your pantry to make it. 🙂

But let’s see our easy chickpea curry recipe, which happens to be dairy free and also gluten free. However, it is high in fibre, and a pretty good source of protein and vitamins.

Why is chickpea good for you?
  • it is high in fibre, which can lower blood glucose levels,
  • good for your bones, because of the iron, phosphate, calcium, magnesium, manganese, and zinc,
  • decreases the risk of heart disease,
  • chickpeas contain selenium and folate, which help decreasing tumour growth rates,
  • it lowers the amount of bad cholesterol.
Nutritients in 100 g
  • 364 kcal,
  • 17 g fibre,
  • 19 g protein,
  • 105 mg calcium,
  • 115 mg magnesium,
  • 6,2 mg iron.
Other ingredients you will need for this recipe:
  • curly kale,
  • kidney beans,
  • brown rice,
  • coconut milk,
  • curry powder and other spices
What about kale?

Kale is the member of the cabbage family, and a cruciferous vegetable like cabbage, broccoli, cauliflower, collard greens and Brussels sprouts. That is why I didn’t like it so much at first. But it can be really good, just give it a try. 🙂

Why should you eat kale?
  • because it contains a lot of vitamins such as A, K, C, B6,
  • because it has a lot of minerals: Manganese, Calcium, Copper, Potassium and Magnesium,
  • it is loaded with powerful antioxidants (Quercetin and Kaempferol),
  • Kale can help lower cholesterol, which may reduce the risk of heart disease,

So you see, this meal is like superfood, so good for your body, and it tastes delicious! You really need to give it a try. 😉

Chickpea Curry with Kale

Very nutritious and filling vegan curry recipe

Ingredients
  

  • 1 can chickpea
  • 1 can kidney beans
  • 100 g curly kale you can use spinach
  • 1 can coconut milk
  • 400 g brown rice or any rice/bulgur
  • 2 tbsp olive oil or coconut oil
  • 1 whole red onion white onion is also good
  • 2 tbsp curry powder add more or less to taste
  • 1 tsp cayenne pepper add more or less to taste
  • 1 tbsp garlic powder add more or less to taste
  • 1 tbsp turmeric add more or less to taste
  • 1 tsp sea salt or you can leave it out

Instructions
 

  • Until the rice is cooking, you can start making the curry.
  • Heat up the olive oil in a saucepan, meanwhile dice the onion.
  • Add the diced onion and stir it. After a few minutes add the drained chickpeas and beans to the pan and cook for about 5 minutes until it starts to blush.
  • Next, add the washed and chopped kale and stir it for a few more minutes.
  • After everything looks cooked, pour the coconut milk into the mixture, then add the salt and spices. Stir it for about 5 minutes.
  • Serve with rice and enjoy!
