Let’s start with the breakfast ideas!
Breakfast
What is the first thing that pops in your mind? Scrambled eggs, am I right? So let’s see some vegan versions. 🙂
1. Vegan Chickpea Scramble (Soy-Free, Gluten-Free, Allergy-Free)
This looks so tasty and filling, I would definitely try this, and the recipe seems easy, which I really like.
2. Scrambled Eggs from Tofu
I always wanted to try this, but I never did. But now is time to make it, because it is so so good! This is an easy replacement for scrambled eggs.
I am sure it won’t leave you hungry! 🙂
3. Farmer’s Market Tofu Scramble
This version of tofu scramble is loaded with fresh veggies to make your meal more nutritious!
4. Mediterranean Tofu Scramble
Do you like mediterraneon food? Then you should try this tofu scramble! 😉
5. Tofu Scramble Breakfast Pockets
Let’s go further and stuff the scramble into puff pastry. Wow! I like this idea. 🙂
6. Vegan White Bean Scramble with Almond Bacon (GF)
Okay, this is one of the best ideas! I love this recipe. 🙂 Almond bacon? Yes, please! And if you don’t want to eat tofu, this recipe is for you!
7. Vegan Omelette from Lentil and Bean
Just look at this, it looks super delicious! Maybe a little bit difficult to make, but I think it is worth the trouble. Mmm, I would eat it right now. 🙂
8. Chickpea omelette
This is what I like to make, because it is ready in 5 minutes, you only need a few ingredients and it’s so yummy. 🙂
The recipe:
Mix 1 cup of chickpea flour with some spices you like (I added mixed herbs, smoked paprika and salt), add ca. 1 cup of water and stir well.
Heat some oil in a pan and fry the omletts like pancakes.
Serve with a lot of veggies and ketchup or BBQ sauce.
9. Mini Chickpea Flour Vegan Frittata Bites (Gluten-Free, Allergy-Free)
OMG, these are so cute and I bet they are tasty too! 🙂 I want to have a bite, how about you?
10. Vegan Breakfast Sandwich
I would definitely eat this one for breakfast! It looks so tasty and I love sandwiches. 😀 I can’t believe it’s vegan, but it is.
11. Curry Egg(less) Salad Sandwich
Another version of breakfast sandwiches, this curry “egg” salad sandwich is perfect for take with you to work or school.
12. Vegan Egg Salad with Bagels
From this picture I believe that this is the best vegan egg salad. 🙂
Did you know that the key ingredient to an egg taste is kala namak? This is a special Indian black salt vegans use to spice up their vegan egg meals. (A little secret: I never used it, and I don’t think I would like it… I don’t want to feel the taste of eggs, haha)

13. Tofu in Purgatory/Vegan Shakshuka
Eggs in Purgatory, more commonly known as Shakshuka, originates from North Africa but is also a common brunch dish in the Middle East. In this case, you use tofu instead of eggs.
It sounds interesting and looks absolutely fab!
14. Eggless Vegan Frittata
I think I’ve never had frittata before, but I would try this one. Just looking at this picture makes me hungry. 😀
What is a frittata anyway?
Frittata is an egg-based Italian dish similar to an omelette or crustless quiche or scrambled eggs, enriched with additional ingredients such as meats, cheeses or vegetables. The word frittata is Italian and roughly translates to “fried.”

Basically, you just have to mix the ingredients in a bowl and then bake the mixture. Sounds so easy, right?
15. Vegan Broccoli Frittata
Here is another version to make a frittata, this time with broccoli. It is easy to make and it’s really healthy. 🙂
16. Vegan Garden Veggie Quiche with Cheesy Crumbs
You can eat this for lunch, breakfast or brunch and it will fill you up. Give this recipe a go!
17. Vegan Egg(less) Salad
This is supposed to be the best “egg” salad, Caitlin (frommybowl.com) promises this looks and tastes like the real one. It goes perfect with toast! 🙂
18. Vegan Egg Benedict
Oh, yes, please! This is such a good idea! As I look at these recipes, I feel like I am learning new and new things. Maybe it’s a shame, but I’ve never heard about Egg Benedict before, but now I would like to try it. How about you? 🙂
19. Hearty Vegan Quesadilla
Oh, I love Quesadillas, I made my own too, you can see it on my instagram. 🙂
I love this version, looks so mouth-watering! As you can see, tofu is a really good alternative to eggs! 🙂
Other vegan egg meals
20. Vegan Mayo Version #1
If I should choose from ketchup, mustard and mayonnaise, I would probably go for mayo! I just love it. But normally it contains eggs (and a lot of calories!).
But fortunately, nothing is impossible for vegans! This first recipe is made from soy milk, apple cider vinegar, mustard and some oil.
It goes well with these onion rings! 🙂
21. Vegan Mayo Version #2
This one is oil free, which I really like about it! 🙂
The key ingredients are tofu and kala namak.
22. Lemon Curd
I remember making lemon curd all the time and I ate it with coconut or butter biscuits. It was so yummy. 🙂 Now I am really glad that I found this recipe, so I can make it again, but this time vegan. 🙂
Anyway, I hope you liked these vegan “egg” meals and you will try some of them (or maybe all). 🙂 I tried to find the bests for you, and if you will miss egg ever again you can make these instead of reaching for something that is bad for you.
