It is officially autumn but the weather is quite warm here. Anyway, the trees and their leaves act like the season requires. Do you like it? Personally, I love it. I just look at these pictures, which can be found on my other instagram account (@suzinspire), and I am amazed by the beautiful nature.

So I thought, I must try to make something from pumpkin, which represents fall season for me. Do you agree? 🙂
But I failed. Well, my wonderful boyfriend surprised me with this delicious pumpkin cream soup. And now I share the recipe with you. It turned out a little bit too spicy to be honest, so don’t put that much chili in it. 😀
Here is what you need:
- 1 big pumpkin ~ 800-1000 g
- 1 onion
- oil (I think coconut or olive is the best)
- 200 ml plant cream (he used rice)
- spices: red pepper, black pepper, chili (recently we try to cook without salt, so it is optional)
Preparation:
- Peel the pumpkin and onion and cut into small pieces.
- In a pan, fry the onion on a little bit of oil, add the pumpkin and pour in enough water to cover it. Season with pepper and chili.
- When the pumpkin is boiled soft, but it in a blender to make the soup smooth and creamy. Then add the rice cream, and boil again.
- For toppings you can add seeds (with pumpkin is the best, but we didn’t have any), and croutons.
- Enjoy!
