I wanted to make this long time ago. I have always loved muffins, they are easy to make yet delicious. Maybe you did not know, but I am a big chocolate fan, so that was no question what kind of muffin will I make. I hope you will also like this triple chocolate vegan muffin. 🙂

Being vegan doesn’t mean that you can’t have pleasure sometimes. You can enjoy eating chocolate and cakes too. So I made this triple chocolate vegan muffin for you, and now I share the secret recipe.

In advance, I must say I barely could photograph it, because my boyfriend almost ate them all. 😀

If you have ever tried to make muffins, you know how easy it is. But if you haven’t, don’t worry, basically just have to mix all ingredients together, put it in the oven, and get them out before they burn. 😉

Let’s get into the recipe!

Triple Chocolate Vegan Muffin

It is a dairy and egg free muffin, made with delicious dark chocolate and frozen berries.

Cook Time 20 minutes
Total Time 30 minutes

Ingredients
  

  • 2 cups wholegrain flour you can use other flour, but it is healthier
  • 1 bag baking powder
  • 1 cup cane sugar
  • 0,5 cup cocoa powder you can use carob powder, or add more if you want darker muffins
  • 100 grams dark chocolate
  • 0,5 cup coconut oil
  • 0,5 cup almond milk other plant milks are good too
  • 0,5 cup mixed frozen berries of course they can be raw
  • 1/4 cup vegan chocolate chips
  • 1 muffin mold I used silicone
  • 24 pieces muffin paper

Instructions
 

  • Heat the oven to 180 degrees.
  • In a bowl, add flour, baking powder, sugar and cocoa powder and mix them well.
  • Put the melted oil and the almond milk in the other bowl and mix them as well.
  • Pour the two mixtures together and make it smooth. Then add the chopped chocolate and the berries, and mix them.
  • Scoop the mixture in the mold, add toppings (more berries and chocolate chips). Don’t fill the molds completely, because of the baking powder the muffin will grow big.
  • Bake them for at least 15-20 minutes.
  • If you can resist, wait until it cools down! Enjoy!

You can add some toppings if you would like to make them more delicious. For example some chocolate cream or maybe this strawberry cream. 🙂
