You might saw that in the About section, that I like vegan food. I would love to share my recipes with you, guys. 🙂 So this weekend I was so excited to cook something special again. I had leftovers from the Ratatouille I made earlier so I thought, why not make a tomato soup? The circumstances were perfect for cooking and shooting. The hot days are finally over, and I didn’t burst into flames from the heat when I was in the kitchen. 😀 What an amazing feeling is that, right?
So, I made my first and probably the best tomato soup or gazpacho from lots of tasty ingredients. I ate gazpacho this year for the first time in Barcelona (you can read my review here about the trip btw). It was so good! I wanted to copy it, and I kinda did. Yummy. 🙂
That was enough talking, let’s get started!
What you will need (for 3 bowls of tomato soup):
- 5-6 big tomatoes (you can use small yellow/red ones as well)
- 4 small potatoes
- ¼ cup of chopped leek (or other kind of onion)
- ~ 2 liter of water
- Olive oil or coconut oil
- Spices: salt, curcuma, garlic powder, vegetable mix, cayenne pepper, oregano
How to make the best tomato soup:
- Cook the potatoes in the water and add some salt and vegetable mix.
- Fry the leek on the oil, then add the tomatoes (also chopped). I used a big and deep pan for that.
- Add the water and the potatoes, and as many spices you like. I recommend to taste it while cooking.
- Cook them together for a little while.
- If you finished cooking, use a stick blender to purée the soup. If it is too thick, you can add more water or maybe some plant milk.
- Serve it with some seeds and rye bread. Enjoy!
