Hello there! If you liked my previous post, you will be glad, because I am here again with a quick and easy vegan recipe that was inspired by Madeleine Olivia, who I like a lot. She has an awesome YouTube channel that you should definitely check out. Also help her reach 500k subscribers, because she deserves it! 🙂

So I mixed up two of her recipes, and the result was this yummy vegan tomato and hummus pasta, with an extra ingredient. Psst! It is a secret. Well, until the end of this post… 😀

So I know that a lot of you (including myself) don’t like to spend so much time in the kitchen, preparing the food that you eat in 5 minutes. That is just unfair, right?

What I am trying to do on this blog – and also on my instagram account – is to make good, healthy, quick and easy vegan recipes for you, because I know that you are busy and have better things to do. But yet, you want to eat healthy and even loose some weight, right?

So let’s get into the recipe!

What you will need (it serves 3 person):

  • 400 g vegan pasta (the best is to use wholegrain pasta or lentil/corn/millet)
  • 8-9 cherry tomatoes (cut in four parts)
  • 150 g hummus of your choice (I used pumpkin flavored, because I think regular hummus is not spicy enough)
  • 0.5 dl of olive oil (extra virgin)
  • spices: salt, pepper, chili flakes, basil, nutritional yeast
  • the secret ingredient: pine nuts (if it is too pricey for you, you can use sunflowerseed or walnuts instead)

This is how you make it:

  1. Make your pasta ready.
  2. In a big saucepan heat up on low heat (you don’t want to burn it) some olive oil and put the pine nuts in it.
  3. Add the cooked pasta and the hummus, and mix them together. Add some spices as well.
  4. In the end, add the chopped tomatoes and mix it.
  5. Put your meal into a bowl and add some vegan cheese if you’d like. Ready to eat! 🙂
