Hi lovelies,
I am bringing you a very good and tasty meal, which is I my current favourite, but it is not sweet like last time. 🙂 I use to buy arugula in my local store, it is not that cheap but very healthy. And it works well in a vegan pesto.
Last time I put it in my sandwich and baked it, it was so good with mozzarella flavoured vegan cheese. 😉 But you can use it in many ways.
But why is arugula so good? Some people don’t like it because of its bitter taste, but you should give it a try.
The benefits of eating arugula:
- it has a good effect on digestion,
- it reduces the chance of developing certain cancers,
- it helps the lung function,
- its vitamin and mineral content is extremely high, including vitamins A, B2, B5, C and K, as well as calcium, potassium, iron, magnesium, phosphorus and silicon. Source: hazipatika.com
And now it is time to show you the recipe.
What you will need:
- 100-150 g fresh arugula
- 20-25 g of walnuts or pine nuts (if you are allergic to nuts, you can use sunflower seed)
- 4 cloves of garlic
- 30 g Parmesan or other vegan cheese
- 0.5 dl of olive oil (extra virgin)
- I also added some salt and pepper
- 400-500 g spaghetti or any pasta you like
This is how you make this yummy vegan pesto:
- Clean the arugula and then add the garlic, nuts, parmesan, oil, and salt (+ pepper).
- In a blender or with a hand blender make it smooth.
- Meanwhile, cook the pasta of your choice.
- Mix the pesto and the spaghetti and it is ready. 🙂
