Mini Chocolate Cakes With Berry Sauce (Vegan, Sugar- Free)

If you are a little like me, you can’t resist sweets and desserts, but I have good news! I have an amazing recipe for you, which is easy to make and guilt-free.

I made this recipe:

  • egg free
  • sugar-free
  • vegan
  • irresistible

If you want to share with others, I recommend making a double amount because the recipe I share here, is only enough for 8 mini cakes – which you could easily eat by yourself… 😉

But without further ado, let’s see the recipe!

How can you make these incredibly delicious mini chocolate cakes?

You will need:
For the cakes:
  • 130 g flour,
  • 10 g baking powder,
  • 10 g cocoa powder,
  • 2 tbsp coconut oil (melted)
  • 130 g erythritol (or another natural sweetener)
  • 2 tsp vanilla extract
  • 140 ml lukewarm almond milk (unsweetened)
  • 2 tbsp chia seeds + 6 tbsp water
  • 100-150 g chocolate chips
For the berry sauce:
  • 150 g frozen mixed berries
  • 2 tsp vanilla extract

And here are the steps you need to follow:

1. Make the chia egg by mixing the chia seeds with water in a little bowl. Set aside.
2. Mix the flour, the baking powder and cocoa powder together.
3. Mix the erythritol, the vanilla extract, the almond milk, the oil and the chia eggs.
4. Add the dry ingredients and stir until well combined.
5. Fill the moulds with the mixture.
6. Bake your mini cakes in a preheated (180 Celsius) oven for about 15-20 minutes.
7. Melt the frozen berries in a saucepan with the vanilla extract. Continuously stirring it, until it looks liquid.
8. Pour it on the top of your cakes 😉

The sweet pastry goes perfect with the little bit sour berry sauce. Of course, you can make the berry sauce sweet if you add sugar or sweetener. Feel free the experiment with this recipe! 🙂

In Hungary, we call these delicious, soft mini cakes "kuglóf". They are a perfect sweet treat for any occasion 😉

Ingredients
  

For the cakes
